Job Description

Are you ready to get in the game of providing your internal and external guests with an exceptional experience that will keep them coming back? View Royal Casino, soon to be Elements Casino Victoria, is on the lookout for an engaged Executive Sous Chef. Under the direction of the Executive Chef you will be responsible for assisting in the overall management and profitability of the culinary operation while establishing a safe and welcoming environment. The Executive Sous Chef will also be responsible for assisting in developing performance objectives and delivering performance evaluations and assumes acting Executive Chef when needed.



  • Providing leadership, direction and mentoring to the culinary operation
  • Assisting in planning, directing and implementing food preparation, purchasing and presentation policies and procedures
  • Assisting in training culinary team members in new culinary techniques through formal training sessions and/ or monthly meetings
  • Oversee and supervise all banquet operations and special functions
  • Participating in trade shows or culinary events when requested and presenting new concepts to the Executive Chef
  • Assisting with the implementation of new programs, projects, F&B outlet openings in conjunction with the Executive Chef
  • Maintaining food and labour costs as per budgetary guidelines and making suggestions to improve profitability
  • Compiling food product requirements from the Chefs in order to submit purchase orders in a timely manner. Signing off on higher level POs, shipments and invoices
  • Offering culinary expertise to internal and external Guests
  • Liaising and communicating effectively with all appropriate operational departments
  • Developing and cultivating strong working relationships with all stakeholders (Guests, ownership and team members)
  • Interviewing, hiring and training and developing kitchen team members in all areas of food operations; planning, assigning, and directing work; managing performance; rewarding and providing feedback to team members; addressing complaints and resolving problems.
  • Ensuring the ongoing practice of safe food handling and preparation techniques. Ensuring compliance with licensing laws, health and safety and other statutory regulations
  • Working closely with Executive Chef and F&B Manager to maintain successful Food and Beverage operations
  • Performing other duties as assigned or directed

  • Understanding of yourself and others when communicating with team members and Guests
  • A passion for providing Great Experiences and Memories to our internal and external Guests in the continual quest of achieving service excellence

  • Minimum 5 years’experience in culinary management
  • Knowledge of Optimum Control an asset
  • Previous experience managing multiple outlets such as banquets and buffets required
  • Demonstrated ability to lead by example
  • Culinary education and previous hotel experience an asset
  • Red Seal certification an asset
  • High school diploma required
  • Level 1 and Level 2 Food Safe Certification
  • Ability to successfully obtain a Serving It Right License
  • The ability to successfully obtain a Criminal Record Check
  • Working knowledge of MS Office
