Job Description

 

Are you ready to get in the game of providing your culinary team the opportunity to grow and develop their skills under your guidance? View Royal Casino, soon to be Elements Casino Victoria, is looking for a passinoate Executive Chef. Under the direction of the F&B Manager you will be responsible for the overall management and profitability of the culinary operation while establishing a safe and welcoming environment. The Executive Chef will also be responsible for planning and directing all food preparation in our multi-outlet environment, ensure adherence to all policies and procedures, maintain food & labour costs, source out new products and services and motivate and lead by example. As the visionary of the culinary department you will spearhead and implement all new culinary projects.

 

 

RESPONSIBILITIES 

  • Provides leadership, direction and mentoring to the culinary team
  • Develops policies and procedures to enhance and measure quality; continually updates written policies and procedures to reflect state-of-the-art techniques, equipment and terminology.
  • Develops standard recipes and techniques for food preparation and presentation
  • Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results
  • Consults with the Food & Beverage Director about food production aspects of special events being planned.
  • Approves the requisition of products and other necessary food supplies.
  • Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
  • Provides training and professional development opportunities for all kitchen staff.
  • Evaluates products to assure that quality, price and related goods are consistently met.
  • Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.
  • Chairs and attends food and beverage staff and management meetings.
  • Evaluates food products to assure that quality standards are consistently attained.

 

QUALIFICATIONS

  • Minimum 5 years experience as an Executive Chef or Executive Sous Chef
  • Post secondary education in culinary management or suitable combination of education and experience an asset
  • Red Seal certified
  • Demonstrated ability to lead by example and mentor the team
  • Hotel and/or multi outlet experience preferred
  • Level 1 and Level 2 Food Safe Certification
  • Knowledge of Optimum Control an asset
  • Strong written and verbal communication skills
  • Computer literacy in MS Office
  • Ability to provide leadership in a team environment and motivating, developing, and sharing in the successes of the team
  • Possess a high level of honesty and integrity
  • Handle a fast-paced, busy, and somewhat stressful environment, and work under pressure and meet deadlines with particular attention to detail.
  • Interpersonal service skills, organization skills to plan time effectively, and work without direct supervision
  • Excellent customer service skills
  • Ability to provide leadership in a team environment and motivating, developing, and sharing in the successes of the team
  • Possess a high level of honesty and integrity
  • Serving It Right Certification or the ability to achieve a Serving It Right Certification
  • The ability to successfully pass a criminal record check (if required)
  • Ability to exceed internal and external customer expectations through timely, effective and service oriented communication
  • A commitment to continually increase your knowledge of our products and services in order to offer exceptional experiences to our guests

Candidates must be ready and willing to work a flexible schedule including early mornings, late nights, weekends and holidays. The scheduled hours of work will be based on customer and business needs.
