Job Description
  • Are you passionate about food? Looking for a place to put your culinary skills to play making exceptional dishes that keeps guest coming back? Casino Nanaimo is looking for a personable, energetic and passionate individual for the position of Cook 1 in our restaurant -  The Well Public House. Under the supervision of the Kitchen Manager, you will be responsible for assisting in the overall management and profitability of the culinary operation while establishing a safe and welcoming environment. The Cook 1 will also be responsible for assisting in developing performance objectives and delivering performance evaluations and assumes acting Kitchen Manager when needed. This position requires schedule flexibility including evenings, holidays, and weekend shifts.

    Responsibilities
    Providing leadership, direction and mentoring to the culinary operation
    Assisting in planning, directing and implementing food preparation, purchasing and presentation policies and procedures
    Assisting in training culinary team members in new culinary techniques through formal training sessions and/ or monthly meetings
    Participating in trade shows or culinary events when requested and presenting new concepts to the Kitchen Manager
    Assisting with the implementation of new programs, projects in conjunction with the Kitchen Manager
    Compiling food product requirements from the  Chefs in order to submit purchase orders in a timely manner. Signing off on higher level POs, shipments and invoices
    Offering culinary expertise to internal and external Guests
    Interviewing, training and developing kitchen team members in all areas of food operations; planning, assigning, and directing work; managing performance; rewarding and providing feedback to team members; addressing complaints and resolving problems.
    Ensuring the ongoing practice of safe food handling and preparation techniques. Ensuring compliance with licensing laws, health and safety and other statutory regulations
    Working closely with Executive Chef and F&B Manager to maintain successful Food and Beverage operations
    Performing other duties as assigned or directed

    Qualifications
    Minimum 2 years experience in culinary  management
    Knowledge of Optimum Control an asset
    Demonstrated ability to lead by example
    Culinary education an asset
    Red Seal certification an asset
    Minimum of high school diploma required
    Level 1 and Level 2 Food Safe Certification
    A commitment to continually increase your knowledge of our products and services in order to offer exceptional experiences to our Guests
    Understanding of yourself and others when communicating with team members and Guests
